First, save the ends of all the lunch meat in the deli case. Save the ham separately, because that will become ham salad. The other lunch meat ends, bologna, pimento loaf, salami, ect. are ground together and mixed with mayo and other goodies (mostly pickle relish, iirc) to make that wonderful mystery food product called "sandwich spread".

Can you grind bologna? I just think it would all just re coagulate, like T-1000

My mom used to make hobo ham salad when we were kids.
She'd chunk up a bologna log, then grind it up along with some pickle relish.
Add some Marzetti's and voila... hobo ham salad.
